Grand Trunk Saloon
Downtown Kitchener's cocktail saloon — serious drinks, Southern-leaning snacks and a no-reservations swagger.

What it is
A 3,000-square-foot cocktail bar and kitchen on downtown Kitchener’s main strip, founded by chef Darryl Haus and partners and relocated in 2024 from its original Ontario Street room to 87 King West. Live music nights, a deep whisky-and-cocktail program, and a Southern-accented snack menu — famously including fried chicken — with a strict no-reservations policy.
Why locals rate it
The Trunk is downtown’s designated good-time room: the cocktails are made by people who care about dilution, the kitchen output is far better than bar-food obligations require, and the move to the main strip gave its honky-tonk-meets-craft-bar energy the stage it deserved. It’s where a drink after work escalates into an evening, and the live programming keeps weeknights alive in a way downtown needs.
What to order
Fried chicken and a whisky cocktail is the canonical order. The rotating punches and juleps reward the adventurous, and the bar staff’s off-menu recommendations are consistently the best thing on the table.
Insider tip
No reservations means timing is strategy: arrive before 8 pm on weekends for a table, or aim for a Sunday evening when the room mellows and the bar staff have time to talk you through the list.
Heads-up
Closed Mondays, no reservations, and it gets loud when live music or a full Saturday hits — this is a saloon on purpose. Not the venue for a quiet catch-up dinner.
