The Bauer Kitchen
An energetic up-market bistro in a restored felt factory — upscale comfort food, brown booze and the room uptown meets in.

What it is
The Charcoal Group’s SoHo-styled bistro inside the converted Waterloo Bedding factory at King and John — industrial steel, reclaimed wood, concrete floors — serving upscale comfort food (burgers, pizzas, pastas, steaks, fish) with weekend brunch and one of the city’s deepest whisky selections.
Why locals rate it
The Bauer Kitchen solved a hard problem: a room lively enough to feel like an event, dependable enough to book without thinking. The felt-factory bones give every dinner a big-city hum, the menu has no wrong answers, and the bar program — self-described home of the best Old Fashioned and widest brown-booze wall in the city — backs the swagger. OpenTable put it on its Canada-wide Top 100 outdoor dining list in 2026, and locals barely noticed because the patio was already impossible to get on a Friday.
What to order
Brunch is the franchise: weekend mornings here are an uptown institution. At dinner, the burger and the rotating fish dishes are the reliable core, and the Old Fashioned is the mandatory opener. Walk-ins are genuinely welcomed — a house policy — if the booking shows full.
Insider tip
The same building holds the Bauer Bakery & Café — grab pastries or to-go cocktails on the way out, and you’ve scouted a second stop for tomorrow morning.
Heads-up
Quiet it is not. The energy is the product, so conversations compete with the room on weekends — ask for the mezzanine or come at off-peak hours if you need to actually hear each other.
