The Bauer Bakery & Café
The Bauer Kitchen's grab-and-go sibling — boutique pastries, crafted coffee and cocktails to go in the felt-factory building.
#10 of 11 cafes in KWC
What it is
The Charcoal Group’s bakery-café tucked into the restored Bauer felt-factory building at King and John — attached to The Bauer Kitchen but with its own entrance and its own agenda: boutique pastries, croissant sandwiches, crafted coffee, lunch specials to go, and the novelty of restaurant-grade cocktails and beer packaged for takeaway.
Why locals rate it
This is what happens when a serious restaurant group runs a coffee counter: the croissants come from people who understand butter at an industrial-professional level, the breakfast sandwiches punch far above grab-and-go category norms, and the espresso program gets the same attention as the restaurant’s bar next door. For the Bauer District and uptown’s southern end, it’s become the default quality stop — the place you grab a proper coffee and pastry without committing to a table-service breakfast.
What to order
A croissant breakfast sandwich and a latte is the signature morning; the pastry case rotates, so ask what came out of the oven most recently. The to-go cocktails are the party trick — picking up a pre-dinner drink alongside tomorrow’s breakfast is a very uptown-Waterloo move.
Insider tip
It shares the building with The Bauer Kitchen and sits steps from Vincenzo’s, the region’s beloved Italian grocer — the three together make King-and-John the best one-stop provisioning corner in Waterloo. Weekend brunch waits next door? The bakery is the no-wait workaround.
Heads-up
It’s a compact grab-and-go room with a handful of stools, not a linger-all-afternoon café — come for quality in motion, and claim the window seats early if you do want to stay.
